Food Trades Report - A report commissioned by the National Industry Skills Initiative was published during July 2001. It sets out a blueprint for how to address the nationwide skill shortages of cooks, chefs, bakers and pastry chefs and suggests the industry more broadly requires an additional 2000 cooks. The recommendations contained in the report are designed to ensure that commercial cookery remains attractive to new entrants and offers adequate rewards and career growth opportunities to retain those already employed in the industry.
